Very Veggie Turkey Meatloaf

This is a very easy turkey meatloaf recipe that packs in a TON of veggies. I can get other nutritious ingredients like flaxmeal and wheat germ into this recipe too without compromising the taste. Sometimes I will use some whole wheat breadcrumbs or quinoa mixed in. This recipe has a lot of room for interpretation, so try adding other vegetables you may have on hand.Try making these in cupcake pans. It will cook faster and everyone can have their own portion with their own individual topping. Baking time will have to be reduced so keep an eye and remove when browned and cooked through. Optional toppings to glaze the top could be sweet and sour sauce, ketchup (no high fructose corn syrup added) or barbecue sauce (no high fructose corn syrup added). This recipe is a steal at about $1.30 per serving!! This dish with a slice of meatloaf, clementine, green beans and brown rice is exactly $2.99. What a balanced nutritious meal. It beats a fast food meal on price and nutrition any day!

Preheat oven to 375 degrees and spray a small loaf pan with cooking spray or coat with canola oil. In a large skillet, warm oil on medium heat. Sautée onions, carrot, spinach, mushrooms and garlic all together until slightly soft, about 2-3 minutes. Cool about 5 minutes in a medium sized bowl. Add remaining ingredients and mix well using your hands. Place in loaf pan and form into a loaf shape. Cook about 1 hour until slightly browned and cooked through. 1-2 tablespoon optional toppings (like sweet and sour sauce, BBQ sauce or ketchup) can be spread on top and baked for the last 5-10 minutes, or served on the side for dipping.
