Turkey-Veggie Burgers

Mixing vegetables into ground meat is a great way to pack in extra nutrition. I made these tonight with some leftover vegetables. Once you try this recipe, you can use other veggies like zucchini, peppers and mushrooms. Playing with different fresh herbs is another way to change the flavor. I was surprised how much the Tiny Tasters enjoyed their burgers tonight. Not a speck was left on their plates!

Pulse onion, garlic, carrot, and spinach and herbs in a food processor until fine (a mini food processor works great for this job). Heat olive oil in a medium skillet on medium heat. Add ground vegetable mixture and cook until soft, about 5 minutes. Cool slightly. In a large bowl add mixture to turkey and remaining ingredients and combine. Form into patties. If patties seem too wet, add additional breadcrumbs. Grill on a well oiled grill (or foil that has been sprayed) over a medium flame about 7 minutes on each side. Make sure inside is well cooked. Serve on a bun, wrap, pita or on on top of a salad with your favorite condiments.

Ground meat can make a great way to introduce meat to a new eater and the soft veggies add some more taste and nutrition, too. For babies that are trying finger foods, break off some small pieces of a burger for baby to try.
