Roasted Balsamic Beets

We love beets at the Dr. Yum Project Kitchen and hope that this simple roasted beet recipe will encourage more folks to try them at home. Roasting beets enhances their flavor and the addition of rosemary and balsamic vinegar makes them extra special.

Method

Preheat oven to 400 degrees. Place cubed beets into a medium bowl and add oil, vinegar, rosemary, and salt. Toss to coat beets evenly. Spread onto a baking sheet in a single layer so that all pieces are in direct contact with the pan. Roast for 20-25 minutes or until beets are fork tender, stirring halfway through. When done, serve and enjoy!
