Cranberry Tea Bread

“This recipe belongs to one of my dearest friends. Her original recipe calls for fresh cranberries, but I love to use a combination of fresh cranberries and fresh blueberries. When I cannot find fresh cranberries, I have made it with frozen cranberries or all fresh blueberries. Method

Preheat oven to 350 degrees. Combine flour, brown sugar, honey, baking powder, baking soda, salt, and lemon zest. Mix in orange juice, egg, and butter until evenly combined. Carefully fold in berries so as not to smash them. Put batter into a greased loaf pan. Bake for 60 minutes. Cool and remove from pan.
